Christopher Stephens and Rachel Collins Stephens, founders of Prometheus Pizza in Fredricksburg, TX, are coming to the mill to teach YOU about what makes them passionate about pizza and the Texas Hill Country! And, as a special bonus, they're bringing some of their favorite wines from our neighbors at Southold Farm + Cellar. (While BYOB is totally fine by us for participants 21+, make sure you save some room on your palate for this special treat!)
In this class, Rachel and Christopher will take you through a top-to-bottom look at making and topping scratch-made pizza dough. You will get an in-depth look at the nuances of stone-milled flour as it applies to pizza, and how different varietals and combinations of stone-milled wheat lend different flavors and textures to your dough. They will teach you how to make and shape your own dough, and you will get to top your own pizza to be expertly fired in Ooni pizza ovens! The duo will also be bringing some top-shelf ingredients for some of the specialty pizzas they sling at the food truck. You'll take home recipes for different kinds of pizza dough, as well as your own pizza dough ball ready to be stretched and baked later in your weekend. And, of course, you'll be able to eat delicious pizza in class.
We are also excited to offer attendees of this class exclusive access to a selection of Prometheus Pizza Flour Bundles! These flour bundles will be specially curated by Christopher, Rachel, and the mill to provide the ultimate flour toolkit for your pizza celebrations at home. In addition to the recipes and techniques learned in class, these flour bundles will come with recipes designed to bring out the best in each flour, and to yield the most delicious pizza dough at home. These bundles will only be available in-class at exclusively discounted prices, just for you!
Once you purchase your tickets, you can also look forward to some curated selected readings in your email from Christopher and Rachel around pizza life. They would love for you to engage with these materials to make the most of your class - these will be sent out about a week in advance of the class date.
Beginners are welcome, and encouraged to attend.

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release Form. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.
Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility.
In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. Should COVID levels rise in the weeks/days leading up to class, we reserve the right to change our masking policy and will reach out via email with any updated guidelines. Should masks become a requirement for class based on statewide or countywide recommendations, non-masked participants will not be able to participate in mask-required classes. Refunds or ticket transfers are available for those who do not wish to attend a mask-required class.
Tickets are non-refundable, but transferrable up to 5 days before the class date.
