Come learn to make soba noodles with us at the mill! Your instructor, Katya, has done extensive tasting & recipe research to bring this curated soba noodle recipe to you. Using a blend of 75% stone-milled buckwheat and 25% stone-milled wheat (with the help of a few other specialty ingredients), Katya has developed a recipe for soba that is achievable with standard kitchen equipment, and highlights the unique flavor of buckwheat with an appealing texture and mouthfeel. 

During class, Katya will walk you through the components of her recipe and their unique preparations. She will discuss (and you will taste) how stone-milled buckwheat lends superior flavor to any soba noodle, with the structural help of stone-milled wheat to let it shine. You will learn how to mix your soba dough and run it through a standard pasta roller to achieve uniform noodles, ready to be boiled and plated for our class menu. Your freshly cooked noodles will complete a bowl of dashi broth, unagi (eel), onsen tamago (deliciously soft egg), nori, and fresh vegetables to give you the ultimate bite. We encourage you to try these traditional soba accompaniments for an incredible experience!

Katya has a wealth of knowledge to share with you about soba recipes and traditions - bring your questions and curiosity, and we'll enjoy SOBA!

This class is BYOB for participants 21+, so bring a special ferment if you so please.

Beginners are welcome, and encouraged to attend.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
