If you are looking for a new way to expand your bread skills, come learn the method and technique for this unique spring equinox bun! Shor and shirin gogal are traditional Azerbaijani round pastry buns made to celebrate Novruz, also known as the Persian New Year, which marks the arrival of Spring. Katya will be teaching you her curated recipes for both sweet and savory versions of these special buns. Expect to learn how to choose and prepare spice varietals for ideal flavor balances, how to laminate dough, and how to properly mix, shape, and proof enriched breads.

Shor Gogal is a savory bun layered with a spiced filling made with turmeric, cumin, fennel seeds, and butter. This combination of spices and aromatics originates from the Baku version (the capital region of Azerbaijan). Shirin-Goghal is the sweet version of this bun, and is often filled with nuts and sugar, as well as with cinnamon and cardamom. Katya will be teaching you a recipe that is spice-forward and accented with turbinado sugar, which lets the flavors and aromatics shine alongside the enriched texture of the bun. During class, you will learn how to make both sweet and savory versions of this pastry, eat freshly baked shor and shirin gogal, and take a few home with you at the end!

 

This class is BYOB for participants 21+, so bring a special ferment if you so please! 

All levels are welcome, and encouraged to attend.

Class Policies:

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
