I was really happen to buy corn from the mill. I was able to make my own very flavorful masa harina. I'll definitely be buying the more exotic colors of corn to nixtamalize so I can have some cool tortillas on hand.

Used cornmeal and flour for fried okra—wonderful! Also, cornbread was excellent and brought to mind cornbread made by my mother and grandmother.
Should the grits be nixtamaiized in some manner? What is the brownish stuff that floats when washing them? Pericarp or bran? They look beautiful but not so soft. The Oaxacan green smell. amazing!
