OCTOBER 8, 2023: Pretzels

Date: Sunday, October 8, 2023

Time: 1pm - 3:30pm

Cost: $120 per single-entry ticket

In this class with Tyler (bread baker & flavor specialist at Abby Jane Bakeshop), you’ll learn how to work with our freshly-milled flours to create beautiful pretzels from scratch at home! You'll learn in-depth process and technique from dough to bath to bake, with the promise of a specially-curated flour blend from Tyler.

Pretzels, though so easily and quickly enjoyed, are a labor of love from start to finish. Many traditional pretzels start with a rye-enhanced dough to achieve depth of flavor, are proofed and shaped into their characteristic knot, then dipped into a pH-adjusted bath (more details in class!) before being salted and sent to bake. With a deep love for pretzels and years of experience under his belt, Tyler will guide you through each step of the pretzel process and explain the science behind his methods, as well as ways to tweak the recipe and technique to customize your pretzel to your own tastes. You can expect to leave the class with a few pretzels of your own, after enjoying some pretzel-centric snacks (at least three mustards are guaranteed to make an appearance).

This class is all-levels - beginners are welcome, and all levels of bread-makers and home cooks can learn something from this class. Those with intermediate to advanced experience will be able to dig into the nuts and bolts of tweaking recipes and methods to achieve masterful results, while beginners will learn invaluable bits of bread science and technique to bring your baking to the next level. This class is BYOB for participants 21+, so bring your favorite beverage (tart kombucha or a crisp pilsner seem appropriate) and banish the Sunday scaries the best way we know how - with delicious carbs.
