      I use Big Country for lots of recipes as well as for fillers such as in meatloaf, and breading for fried chicken, okra, etc. It's my go-to wheat berry.

      This is my first attempt at milling at home. I had no idea there were so many varieties of wheat berries! I chose this company initially because the website had a guide directing me to which variety of berry to use when making different foods (cakes, flour tortillas, biscuits etc). That was very helpful. I was a return customer because the berries made delicious bread!

      Pan bread favorite

      I have been experimenting with different wheat varieties and have finally found the wheat that my husband likes the best. I am using the 70% Big Country hard white and 30% Khorasan. It makes a well risen, soft and tender, very tasty sandwich bread my husband said is “the best!” So glad I persevered. I make it both ways, as a yeast bread and naturally leavened.
