Marquis is a cross between Red Fife and Red Calcutta, developed in Canada in 1906. It accounted for 11 million acres of wheat grown in the U.S. by 1919. This hard red wheat has excellent milling and baking properties. It has a similar flavor profile to Red Fife, but milder, and makes a stronger dough. Our Marquis was grown by Henry Martens in Tokio, TX, and Todey Menix in Lamesa, TX. 11.35% and 14.93% protein, and 326 and 359 falling number, respectively

    I received Marquis wheat berries last week which I milled into fine flour. Today I used the flour to bake a 100% whole grain sourdough pan loaf. The dough was beautifully elastic without being tough. I got a beautiful well risen loaf. The flavor is fantastic. Red whole wheats can sometimes impart a certain bitterness to bread but there was none with Marquis. Thank you for a wonderful product!
