Come make dumplings with us! We regard dumplings as the ultimate comfort food, as well as one of the best ways to share warm & cozy sentiments with friends and loved ones. What are dumplings, if not a tiny & edible warm hug? For this master class, Katya Lyukum is coming to the mill to share her global dumpling knowledge with you (check out the photos to see some of her dumpling creations!) In Katya's words, dumplings "can be an ultimate breakfast or an appetizer, a main dish, a small plate, or a dessert enjoyed any time of the day." As a Ukrainian native, she has extensive knowledge of Ukrainian and Polish dumpling traditions and will spend the majority of this class teaching you one of her favorites - pierogi! 

Traditionally, Polish pierogi (also known as Ukrainian varenyky) are served with sour cream or melted butter. Signature Ukrainian sour cherry and blueberry pierogi are drizzled with fruit syrup or honey. During class, you will learn a foolproof method for dumpling dough, which can easily be adapted to your own personal tastes. You will master the shaping of traditional pierogi while also observing a few demos on how to use the same dough recipe for creative dumpling shapes. You will learn to make pierogi from start to finish and enjoy them in a tasting course of at least three unique Ukrainian fillings & preparations for dumplings. Expect to reach ultimate sweet and savory satisfaction through this special dumpling course!

  • Potato + Mushroom, tossed in butter
  • Sauerkraut/Cabbage + Onions caramelized in rendered bacon fat, tossed in butter 
  • Ricotta/Cheese, topped with traditional Ukrainian Sour Cherry Sauce

This class is BYOB for participants 21+, so bring a special ferment if you so please for ultimate Friday fun! 

Beginners are welcome, and encouraged to attend.

Class Policies:

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. Should COVID levels rise in the weeks/days leading up to class, we reserve the right to change our masking policy and will reach out via email with any updated guidelines. Should masks become a requirement for class based on statewide or countywide recommendations, non-masked participants will not be able to participate in mask-required classes. Refunds or ticket transfers are available for those who do not wish to attend a mask-required class.

Tickets are non-refundable, but transferrable up to 5 days before the class date.

Learning Can Be Fun!

I came away from Katya's class and Kimberley's mill tour about 15% smarter than I went in. Katya's instructions were detailed and lively and spiced with humor. I came away with tips from how to cook mushrooms to bring out the most flavor to how to efficiently roll a circle of dough into a rectangle. The classroom is set up for hands-on participation, with lots of elbow room and ingredients pre-measured and ready to go. (Someone else even does the dishes.) I'm hoping for more classes from Katya in the future.
