Join us for this in-depth workshop on focaccia, where we'll cover THREE Italian focaccia traditions from North to South! This class will be an intimate, hands-on experience for a small group of participants so that you can nerd out on differences in ingredients and technique between Genoa-style fugassa, focaccia barese, and focaccia di Reco with Martina Locatelli. 

During this focaccia intensive, you'll master three distinct recipes for Italian focaccia. Like many Italian delicacies, this flatbread boasts regional flairs that highlight different techniques and flavor additions to achieve distinctive Italian results. For Genoa-style fugassa, you'll learn how to incorporate the use of salamoia, or brine into your bread finishing technique. Focaccia barese, on the other hand, is topped with herbs and tomato to accentuate the olive-oil flavored dough. Focaccia di Reco is perhaps the most shaping-intensive version, and is stuffed with Italian cheeses like crescenza or stracchino which make an already-delicious bread that much tastier. You'll learn to mix, shape, proof, and bake each of these three focaccias and leave with a feast of flatbread to enjoy all weekend. As a bonus, each of these recipes will feature a distinct BSM flour, so you'll experience firsthand the differences in performance and flavor that each of our single-varietal bread flours have to offer.

By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

Really enjoyed Hannah Casparian’s class. Learned alot about how to make focaccia, timing your amount of yeast or starter, and made a delicious focaccia to take home.

This class was fun and full of information. We learned a lot! Hannah is wonderul instructor and Kimberly is so helpful and teaches you so much regarding the Mill which was very interesting! Can't wait to go back.
