JUNE 23, 2024: Cornbread & Porridge Tasting Dinner - Ukrainian + Texan Traditions

Join us at the mill as Katya Lyukum leads us through a corn-centric tasting + cooking course! Katya is a global culinary expert with roots in Ukraine and Georgia, so these recipes will be particularly close to both her native and adopted homes. This experience at the mill will feature yellow, white, and blue varietals of our delicious stone-ground corn, comparing and contrasting them across Ukrainian and Texan traditions. 

During class, Katya will lead you through four different recipes for cornbread and savory corn porridges. You'll learn how Ukrainian and Texan traditions compare in their incorporation of flavor through various techniques and ingredients, all the while getting to know the nuances of flavor and texture across three corn varietals (yes, there's a difference!). Your tasting menu (and cooking instruction!) will include:

  • Texas White Corn Grits: topped with shrimp and homemade achiote sauce (Katya will teach you how to make her customized achiote sauce too!)
  • Ukrainian Yellow Corn Banosh: savory grits porridge, cooked in a sour cream-enriched broth and topped with bacon cracklings, feta, and caramelized onions 
  • Texas Hopi Blue Cornbread: classic inclusions of fresh sweet corn, poblano pepper, and cheddar cheese
  • Ukrainian Piryank ("Feather Bread") with Yellow Corn + Scallions: traditionally spiked with scallions or fresh seasonal herbs, Katya has adapted this recipe for BSM's classic yellow corn with its characteristic toasty flavor

Once Katya walks you through how to execute each recipe, paying attention to critical flavor and texture development points, you will be able to create one of these recipes from scratch in class, and taste the other three as your fellow guests complete their dishes. Expect to gain a wealth of knowledge - sharpen your flavor palate, learn similarities and differences between international food traditions, improve your ability to build depth of flavor in finished dishes, and learn more about corn!

Class Policies:

By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
