Brought from the seaside town of Genoa, Italy in 1819, Mediterranean was the most grown wheat in Texas in 1919. Then, it was forgotten.




Mediterrranean is a flavorful soft red wheat that is the perfect way to bring history to your table in the form of tortillas, soft cookies, flatbreads and more.

Awesome Pasta

I used this flour to make whole wheat pasta. The flavor was delicious and the wheat itself quite light. I had no need to cut the whole wheat with all purpose.

Used this for banana bread and carrot cookies and pancakes! I love how the whole wheat version of this flour makes a delicate and earthy crumb!
