Rather than focusing on all of the individual components of ramen, this class takes a deeper look at the craft, technique, and science behind transforming heritage flour into fresh alkaline noodles.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eStudents will work through the process from beginning to end: mixing a low-hydration alkaline dough, understanding the role of alkaline salts, resting and developing the dough, compression and lamination, sheeting to the proper thickness, and finally cutting and cooking the noodles.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWe’ll explore both machine-cut and hand-cut noodles, giving students an understanding of how thickness, width, texture, and cutting method can change the final eating experience.
