We are excited to have Laura Galos, owner of The Fika Table bakery in Austin, Texas, back at the mill to teach you how to make another delicious Swedish specialty! Swedish semlor (singular "semla") are a seasonal treat made before lent season. Traditionally, semlor are eaten on Fat Tuesday (Mardi Gras) the day before Lent begins, though these buns are so popular in Nordic countries that they can easily be found starting at the beginning of the new year through Mardi Gras. Much like King Cake in the U.S., semlor are a highly prized and seasonal delicacy, and are only available during this short period of the year. Though semlor is the Swedish word for this treat, they are enjoyed with regional variation all across Nordic countries - some are filled with jam instead of the traditional almond filling, and others are served bathed in warm milk.

So, a little bit about the anatomy of this treat: semlor are yeasted buns, and are made with a cardamom-flecked enriched dough. They are stuffed with homemade almond filling, and topped with fresh whipped cream. Need we say more? Semlor are a yearly tradition at The Fika Table, and Laura is so excited to teach you all about the technique and tradition behind these special buns. During class, you will learn how to make each component of semlor from top to bottom, and you will leave class with 6 individual buns to take home - if they last that long! In addition to the recipe & method instruction, Laura will also be bringing some of her other specialty confections to have an autentic "fika break" complete with coffee and treats (semlor will of course be making a fika appearance, but you can also look forward to enjoying Laura's cardamom buns).

A little bit about your instructor, Laura Galos: 

"The Fika Table started in Austin, TX in 2020 when founder Laura Galos decided to fulfill her dream of owning a small business that conveyed hospitality and the joy of gathering. Our menu leverages her Finnish ancestry, regional traditions, and inspired twists based on local seasons and ingredients." 

We hope you come to this class to expand your pastry repertoire, and learn more about baking with stone-milled flours! 

Beginners are welcome, and encouraged to attend.

Class Policies:

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. Should COVID levels rise in the weeks/days leading up to class, we reserve the right to change our masking policy and will reach out via email with any updated guidelines. Should masks become a requirement for class based on statewide or countywide recommendations, non-masked participants will not be able to participate in mask-required classes. Refunds or ticket transfers are available for those who do not wish to attend a mask-required class.

Tickets are non-refundable, but transferrable up to 5 days before the class date.

In the event of class cancellation, we will email you to notify you of a canceled class.
