Ossetian Pies are a staff favorite around the mill, and for good reason. Come learn about these incredible savory stuffed flatbreads with us and eat well while you're at it!

During class, Katya will teach you and your partner to make one of our favorite stuffed flatbreads - the Ossetian Pie. These tender, stuffed flatbreads are perfect as filling appetizers for a crowd, or as the centerpiece for a family-style meal. These pies are also perfect for any pizza enthusiast ready to expand their flatbread repertoire, and dive into the world of stuffed dough. Classic Ossetian pies combine feta-like cheeses and seasonal greens and vegetables to create a well-rounded mouthful. Hot out of the oven and brushed with melted butter, these are sure to please even the choosiest palate! In this class, Katya will walk you through the dough-making, shaping, stuffing, and baking processes from start to finish, and you will be able to sample a couple different fillings. The dough recipe you will learn is true to Ossetian recipes, and will teach you how to manipulate freshly milled hard wheats to yield a soft, creamy crumb.

The tender flatbread dough is perfectly complimented by Katya's curated menu of traditionally-inspired fillings using greens + cheese, and locally sourced meat with a unique spice blend. Ossetian pie stuffings are, at their heart, seasonal. In spring, the most popular stuffings are young beet tops with cheese (Tsakharajin) and wild garlic sprouts with cheese (Davonjin). Many cooks in Ossetia mix various wild or garden spring greens to combine with cheese — the more, the better the flavor. During the class, we will use a baby spring mix of leafy vegetables readily available at local supermarkets. In addition to this sampling course, you'll learn several traditional fillings and methods from Katya, and take the recipes home for 3+ fillings to try at your leisure!

Beginners are welcome, and encouraged to attend, though this class does include some intermediate level technique 😉.

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

Awesome Class and Teacher

This class was awesome. Katya was an amazing hands on teacher. She gave us great information on all the ingredients being used as well as background on the pies we were making. Katya also gave us helpful hints while we were making the pies and helped us out if we had any problems. The wine pairings were also great (loved the Rose that was served while we were making the pies before the actual tasting). Loved this class and looking forward to attending more.
