    Using our organic polenta, this sliceable, grilled version paired with grilled seasonal vegetables and fruits makes a great light summer dish...or dessert! This gluten free-adjacent option allows you to get creative with various toppings and ways to serve at your next summer gathering.

    Grilled Polenta

    *This recipe was grilled over a gas grill

    *Gluten free adjacent for those with moderate gluten sensitivities (Not celiac friendly)

    Yield: 6-8 servings (2 slices per person)

     

    Ingredients:

     

    1 cup BSM polenta (any variety)

    4 cups of broth or water (broth will add more flavor)

    ½ tsp fine sea salt

     

    Garnish suggestions:

    Roasted or grilled vegetables

    Roasted or grilled fruits

    Soft, young cheeses

    Balsamic reduction

    Honey

    Assorted nuts

     

     Method:

    In a medium sauce pan, combine the polenta and liquid. Bring to a boil while stirring occasionally. Once the mixture begins to boil, reduce the heat to low and continue to stir often to prevent the bottom from sticking. Continue cooking for 25 min or until the polenta has absorbed all of the liquid and is thick, resembling a porridge.

    Pour the cooked polenta into a glass casserole dish or pan, and spread the polenta evenly. Allow the polenta to cool to room temp, then place plastic wrap directly over the polenta to prevent condensation in the fridge. Refrigerate the polenta for at least 4 hours or overnight before grilling as this will allow the polenta to firm up. 

    Remove the chilled polenta, and cut individual squares or wedges depending on your preference.

    Have a grill preheated and ready for grilling. Place a griddle top over the grill and allow to preheat. Spray the griddle with pan spray generously to prevent the polenta from sticking. Place the polenta pieces onto the griddle at a 45° angle to achieve those nice grill marks. Allow the polenta to grill over high heat on each side for up to 10 or so minutes or until the polenta will easily flip over without sticking. At this point you should see nice grill marks on each side.

    Serve immediately with your preference of toppings for a great light summer meal or even make it into a dessert with grilled fruits, honey, and soft cheeses!
