      After 23 years as a gambist and conductor, James Brown sold his prized violas de gamba and bought a mill. He specializes in landrace and heritage grains and corn. His favorite, if pressed, is Rouge de Bordeaux.

      I made a really nice loaf of sourdough using 40% fresh milled flour from the Butler’s Gold wheat berries. Nice strong flour, good oven spring and nice crumb. Lovely flavor, no bitter notes. Will definitely be buying again.
