Looking for a fun, interactive way to bring a taste of Japan into your kitchen? This 4-hour workshop introduces you to the art (and excitement) of making fresh Udon noodles—a comforting and iconic Japanese dish known for its plump, chewy texture.
Don’t forget your craziest socks—the sillier, the better—because we’ll be kneading dough the traditional way (with our feet!), all while keeping everything clean and tidy inside sturdy bags. We’ll be using a custom all-purpose blend of heirloom flours with just the right amount of gluten to create a perfectly soft, satisfying bite.
Under the guidance of instructor Katya Lyukum, you’ll master step-by-step techniques for mixing and “stomping” your Udon dough, then the dough rests while you enjoy a tour of Barton Springs Mill to learn about the grain-milling process behind our exceptional flours.
Next, we’ll craft a seafood Udon soup featuring a flavorful dashi base, plus sake-steamed shrimp, salmon, and steamed vegetables. Along the way, you’ll discover how to adapt these techniques at home with different stocks or broths to suit your taste.
Finally, we’ll gather to savor our freshly made noodles—a warm, delicious meal you just created. Don’t forget to purchase flour at 15% off, so you can keep experimenting at home!

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
