    Come take this pastry crash course with us, where you will learn the fundamental French pastry dough method applicable to éclairs, gougères, profiteroles, and more.

    In this class with Ashley Whitmore, you’ll dive into what makes our flours unique in pastry applications. Ashley will teach you how to make your own choux pastry from scratch, and guide you through how to choose the right stone-milled flour for this delectable pastry. Choux is a foundational pastry technique that involves cooking your flour to yield a pipe-able, moldable, and supremely tender dough. You will learn how to make and utilize choux pastry in both sweet and savory applications - after this class, you'll be ready to make èclairs, profiteroles, gougères and more! As a bonus, Ashley will go over techniques for fillings and glazes - think creme patisserie and chocolate glaze - so your home confections will look fit for a French pastry case. 

    All levels welcome! Choux is an intermediate technique that will improve pastry arts for beginner thru advanced chefs. Expect to learn a LOT and don't be afraid to ask questions!  

      Things to look forward to:

      • Have an opportunity to work with our own fresh grains and flours, grown organically and stone-milled onsite!
      • Learn about the differences between store-bought and stone-milled flours
      • Make and eat fresh choux pastries
      • Tour the mill with our Education Director
      • Purchase BSM products at a 15% discount

        Class Policies:

        TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

        By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

        Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions. 

        In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. 

        In the event of class cancellation, we will email you to notify you of a canceled class.

        Time well spent

        This was a nice way to spend a relaxing Saturday with my daughter. We both learned to make things we’d never made before and left feeling capable of making them in our own kitchens.
        The workspace was clean and the program was well organized. Ashley did a great job teaching.
        I really enjoyed the mill tour and learning about the organic wheat grown and used in the various products offered at BSM.
        Popping into the bakery next door to grab some fabulous artisan sourdough loaves and croissants before leaving was just another layer to our fun day.

        We had a great time at the choux pastry class! I had no experience whatsoever making choux but the class made it very approachable. The instructors also spent a lot of time teaching about wheat and flour which was very interesting and gave me a lot of insight into why quality products are so important even in home baking. Our finished pastries were absolutely delicious and we even had extra time after class to stop next door at Abby Jane Bakehouse for some extra treats to bring home. Highly recommend!
