Join us for an extraordinary baking experience as we delve into the art of crafting a traditional Ukrainian brioche-style bread just in time for the holiday season. Our instructor, Katya Lyukum, will guide you through creating an iconic Snowflake Bread made from heirloom wheat flour milled right here at the mill.
The versatile dough recipe lends itself beautifully to sweet and savory variations, with endless possibilities for shaping. From intricately braided loaves to elegantly decorated rolls and pies, it can be tailored for any occasion. It's the perfect choice for festive gatherings or a thoughtful, homemade gift—because, here at the mill, we believe the best gifts are edible.
In this class, you’ll learn about enriched doughs, which use dairy and eggs to elevate flavor and texture. Katya will share her expertise on essential techniques, such as managing dough temperature, optimal resting times, and perfecting the proofing process—the key to mastering the delicate balance required for brioche-style bread.
The Snowflake Brioche you’ll learn to create is light, fluffy, and subtly sweet with a nutty undertone, making it a stunning centerpiece for any table. Katya’s unique recipe features honeyed nuts, which pairs beautifully with the bread’s glossy, golden-brown crust. Come prepared to master adaptable shaping techniques and leave with a newfound confidence in working with enriched doughs.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).
By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.
Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
