    Step into culinary mastery with our Beef Wellington class, where tradition meets innovation through heirloom wheat flour milled at Barton Springs Mill. In this class, you’ll learn to perfect one of the most elegant and impressive dishes in classic cuisine: Beef Wellington. Under the expert guidance of Katya Lyukum, you’ll discover the techniques needed to create this iconic dish from start to finish.

    At the heart of this class is the delicate art of crafting the golden, layered pastry dough that envelops the tender beef fillet. You’ll use our locally milled heirloom flour, which enhances the dough flavor and adds a distinct texture and depth, elevating the dish to new heights. Heirloom varieties bring an artisanal quality and a unique character that mass-produced flours simply can’t replicate.

    You’ll also learn how to season and sear the beef expertly, prepare classic French mushroom duxelles, and master stuffing, layering, and shaping Beef Wellington to ensure perfect results every time. Whether you’re preparing this dish for a holiday celebration, a special occasion, or simply to hone your skills, Beef Wellington is a show-stopping centerpiece that combines technique, precision, and artistry.

    Join us at the mill right before New Year’s Eve for an unforgettable experience where you’ll refine your dough-making abilities and elevate your understanding of classic cooking with the highest quality ingredients, including the exceptional heirloom flour from Barton Springs Mill and Prime beef filet mignon. By the end of this class, you’ll take home your two-portion (6oz per portion) Beef Wellington that’s as beautiful as it is delicious to bake at home and serve for dinner the same night! 
    Please ensure you have a cooler with ice blocks to transport your creation home safely. If you are unable to bake this yourself, we can absolutely have it baked at the Education Center, but it might mean you are here later than 5:00pm

    Class Policies:

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions. 

    In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
