Red Fife is a favorite to mix with bread flour or to use alone in naturally leavened artisan breads and as sourdough starter refresher. I often mix with Einkorn. I like the Red Fife aroma, crumb, color, strength, and taste. I usually mill my own wheat berries but the milled flour from BSM is equally wonderful.
I add all three of these to my bread recipe that I made 2-3 times a week. I feel so healthy adding these grains in, and I’m so thankful Barton Springs offers them for me!!
This is my favorite wheat for sourdough bread. It's high protein content makes a wonderful loaf.
