Miller's Nog Punch 

Miller’s Nog Punch is the quintessential addition to your festive gatherings! We’ve taken our Purple Straw and yellow cornmeal to create an incredibly rich holiday beverage with homage to Mexican atole and eggnog. Whether alcohol free or spiked, it is sure to be a crowd pleaser to ring in the holiday cheer.

Yield: 6 (1⁄2 cup) servings
Note: contains eggs. Similar to eggnog.
Tools: kitchen thermometer, fine strainer or sieve

Ingredients:
20g BSM Yellow Cornmeal (toasted)
20g BSM Purple Straw WW (toasted)
110g sugar
650g whole milk
200 heavy cream
3 large egg yolks (room temp)
6g ground cinnamon
3g ground cloves
2g fine sea salt
Heavy pinch of ground mace
7g vanilla extract
2 oz Brandy (optional)
1 oz Bourbon (optional)
Grated nutmeg to garnish
Zested orange to garnish

Place the cornmeal and Purple Straw flour into a skillet. Whisk on medium-high heat until you begin to see the mixture turn slightly golden and the aroma becomes similar to toast. Remove from heat and cool.

In sauce pot, combine the whole milk, heavy cream, cinnamon, clove, salt, and mace. Whisk together. In a large mixing bowl, whisk yolks, sugar, toasted cornmeal, toasted flour, and a large splash of the milk mixture. Whisk the mixture vigorously until it is pale yellow for about 1 min.
Place the remaining milk mixture over medium, and bring just to a simmer. Temper in the milk mixture to the egg mixture slowly while whisking simultaneously.
Prepare an ice bath by filling a large bowl halfway with ice. Place another bowl on top of the ice bath bowl. Set aside.

Pour the combined mixture back into the sauce pot and whisk continuously on medium heat until the mixture reaches 170°F. Strain the cooked mixture into the nesting bowl over the ice bath to sift out the larger cornmeal bits and stop the cooking process. Whisk in the vanilla, brandy, and bourbon. Cover with plastic wrap, and chill completely before consuming. Garnish with grated nutmeg and orange zest. Tis the season!
