Puffed Wheat Berry & Oats Granola
Puffed wheat berry granola using our Einkorn berries elevates snack time. Toss in your bag for something to munch on or sprinkle into yogurt. Make a big batch and jar it up for the week! Future you will thank present you.

Yield: 3 cups
Ingredients:
150g (1 cup) BSM Einkorn wheat berries (puffed)*
90g rolled oats (Bob’s Red Mill used here)
65g chopped walnuts (optional)
65g chopped pecans (optional)
210 assorted chopped dried fruits (your preference)
85g coconut oil (melted)
85g honey
6g fine sea salt
5g ground cinnamon
4g ground coriander
zest of two medium oranges

*Soak the dried fruits in water overnight as this will prevent the fruit from becoming hard in the bake. Strain very well before use.
Method:
Preheat oven to 350°F
In a large bowl combine all of the dry ingredients including the strained dried fruits except for the puffed wheat berries. In a smaller separate bowl combine the melted coconut oil, honey, and orange zest. Pour the wet mixture over the dry ingredient mixture and fold until the
mixture comes together.
Spread onto a parchment-lined baking sheet and bake for 20-22min depending on your oven.
Be sure to fold the mixture around with a spatula at the halfway mark of the overall time to ensure an even bake.
While the granola is warm right out of the oven, fold in the puffed wheat berries to allow the mixture to come together. Allow to cool completely before use.
Enjoy all on its own, as a cereal, or sprinkled over your favorite yogurt.
