Come make Franco-German pizza with Katya Lyukum! Expand your pizza repertoire with this traditionally wood-fired flatbread formulated as a baker's treat.

Known as Tarte Flambée in France and as Flammkuchen in Germany, this pizza dish has humble origins as a sacrificial flatbread used by Alsatian farmers and bread-bakers to test the temperature of their wood-fired bread ovens. While still best enjoyed hot out of a pizza oven, today's Flammkuchen can be ordered at restaurants or made at home in your oven, and often features dressed-up ingredients like crème fraîche, lardons, and delicate alliums like shallots or leeks. 

During class, you will learn to make this unique pizza dough from scratch, incorporating both sifted and whole wheat varietals for maximum flavor and texture. Katya will walk you through the flavor profiles and performance benefits of different BSM wheat varietals, so you'll leave a little wheat-smarter than you arrived. You'll also learn the ideal preparation methods for this flatbread's characteristic creme fraîche-based white sauce, lightly caramelized leeks, and cured pork or mushroom addition, until we're all ready to fire off our pizzas and enjoy.

    NOTE: Bring a friend to partner with in class, or partner up with a new friend in class for this delicious experience! We will be asking participants to partner up when topping & firing their doughs, so we have time to make enough flatbread for all to enjoy.

    This class is BYOB for participants 21+, so bring a special ferment if you so please for ultimate Friday fun! Katya recommends an elegant Riesling. 

    Beginners are welcome, and encouraged to attend.

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

    In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

    Katya is a great teacher

    I enjoyed the class. However, I would have appreciated a heads up that there would also be a vineyard owner with wine tasting there.

    This class was top notch and the tour of the mill was impressive.

    Who knew this little gem of a place existed in the TX Hill Country?! Not only did we learn how to make Tarte Flambee but Katya was generously peppering in more information. The mill is fascinating and we really enjoyed our tour.
