Red Fife is a heritage wheat which originated in Ukraine and was brought to Ontario by farmer David Fife in 1840. Red Fife was then grown in the US by Wisconsin farmer J.W. Clarke in 1860, and remained popular for several decades.

Used the flour in a 45% Red Fife sourdough recipe and it was wonderful. Great rise, chewy crust with a light open crumb. Very flavorful and a nice alternative to regular hard red whole wheat flour.
