    Expand your kitchen repertoire, and learn to make crispy pastelillos with us at the mill! 

    Portable hand-pies, turnovers or empanadas, whether fried or baked, are a beloved street food everywhere - where you find people, chances are you will quickly find fried dough stuffed with sweet and savory fillings. For this class at the mill, Nadia will be teaching you about a Puerto Rican variation of stuffed + fried dough - pastelillos or empanadillas on the island! These savory, portable morsels are typically stuffed with picadillo in their home region, but the recipe is endlessly adaptable for vegetarian savory options or even a sweet filling. For your class pies, we will make the classic meat-stuffed version - if you are a vegetarian, please reach out to us at education@bartonspringsmill.com to let us know, and we will make sure to have some veggie-friendly alternatives!

    During class, you will learn how to perfect a dough formula that creates a crispy, tender shell with plenty of crispy bubbles & flakes. We will go over stuffing variations and recipes, and Nadia will teach you how to properly shape & stuff your hand-pies. We will go in-depth on proper fry technique to achieve the perfect bubbly, golden and flaky exterior. While this class focuses on the traditions and techniques for Puerto Rican pastelillos, expect to master a slew of recipes and methods that will have you frying dough left and right!

    This class is BYOB for participants 21+, so bring a special ferment if you so please for ultimate Sunday fun! 

    Beginners are welcome, and encouraged to attend.

    About your instructor & BSM Education Center Co-Director, Nadia Rodriguez:
    I got my culinary degree in 2018 but have been working in the culinary industry for 10 years now, with both savory and pastry experience. My passion for cooking started early with my grandmother, and I believe cooking is sharing love. I adore Italian, Asian and Latin cuisines. I love to curate flavors for individuals and make something unique and one of a kind. I love sharing the knowledge I have gained and showing how amazing ingredients such as Barton Springs Mill flour and the attitude you bring toward those ingredients can truly transform food into an experience. My ethos is have fun, do it with love, and you can't go wrong. :)
    Growing up as a Puerto Rican in central Texas there was always a lack of good local spots that could support my cravings for the delicious fried, flaky and delectable street foods I was used to growing up eating to back home in Philadelphia. Whether you are a fellow Boricua craving a taste of the Island, or a newbie who is intrigued and would like to know more, I invite you to join me. You won't be sorry!

    Class Policies:

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions. 

    In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
