    Do you adore eclairs and cream puffs? Have you considered croquembouche too difficult a dessert to make at home? In case you've never heard of this delicacy, croquembouche is a traditional dessert the French serve for special events like weddings, baptisms or birthdays and consists of cream puffs dipped in a strong candied sugar "glue" and arranged into a magnificent tower. 

    Learn the secrets of this treasured French dough from Jessica Dowdy Lopez, a pastry chef trained in Paris, France who has worked in a Parisian Michelin-starred kitchen, as well as artisanal bakeries, restaurants and hotels in Texas. 

    This is a master course in all things pâte à choux. You'll learn the dazzling history of this unique dough, which dates back to Renaissance times. Highlighting Barton Springs Mill's French heritage landrace grain, Rouge de Bordeaux, brings another level of flavor and authenticity to the table.  

    Adding fun seasonal flavors along the way, you'll learn technique and custom recipes for eclairs filled with mulled wine cream, and choux crème filled with boozy (or not!) eggnog custard. Finally, the pièce de résistance, you will make a little chantilly-filled croquembouche tower of your own to take home, admire and devour. 

    Enjoy a festive mug of hot spiced wine or apple cider and choux pastries as you learn new pastry skills to impress your family and friends this holiday season.

    Class Policies:

    By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

    In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
