    Pancakes with ancient grains

    Yield: 6-8 6-inch pancakes

*This is a base recipe to showcase the addition of ancient grains that provide a boost in nutrition and flavor. This recipe is dairy-based.

    Ingredients:

    90g BSM All Purpose flour

90g BSM ancient grain variety (Einkorn, Spelt, Emmer)

    14g baking powder

    3g fine sea salt

    heavy pinch of cinnamon (optional)

    20g honey

300g full fat buttermilk (room temp)

    57g unsalted butter (melted)

    1 large egg (room temp)

butter or pan spray for skillet

It is important for all of the ingredients to be room temperature for even color in the cooking process. These pancakes are fluffy in texture. For thinner pancakes, add an additional 57g of buttermilk or whole milk.

Ancient grains add a boost in nutrition as well as flavor and texture. Create your own blend of all three ancient grains to add to this pancake recipe, or use one variety at a time. Follow your grain journey as you see fit!

    Method:

Preheat a large skillet or flat top to medium-high heat.

In a bowl, combine the dry ingredients and whisk together. In a separate bowl, whisk together the buttermilk, melted butter, honey, and egg. Gently whisk in the wet ingredients with the dry ingredients and set aside.

Spread butter or spray the skillet with pan spray. Ladle some of the batter at a time into the preheated skillet. Allow for bubbles to form in the center, and for the edges to slightly raise before flipping. Adjust the temperature when needed.

Serve warm with butter and syrup, of course!
