Waterford Blaa is an authentic Irish yeast roll historically made and popularized in Waterford City, Ireland since the 17th century. These extremely soft and light rolls made with our organic Yecora Rojo 00 flour is the perfect driver for bacon & egg sandwiches or a classic ham and cheese sandwich. Heck, they're even incredible with butter & jam. Celebrate this St. Patrick's day with this versatile recipe!

Waterford Blaa
Yield: 8 large rolls
Ingredients:
10g instant yeast
10g sugar
10g fine sea salt
325g water (100°F warm)
20g unsalted butter (room temp)
Garnish:
BSM AP flour for dusting
Method:
In the bowl of a stand-up mixer, add the warm water, sugar, and yeast. Add the flour, salt, and softened butter. Use the dough hook to mix the dough on low speed before bumping it up to medium speed. Allow the dough to mix on medium speed for 5 min or until the dough becomes elastic. Reverse the dough onto a work surface and knead with your hands, forming a soft elastic ball. Spray a mixing bowl with pan spray, then place the dough into the bowl. Cover with plastic wrap and allow to ferment for 1hr or until doubled in size.
Divide the dough into eight dough balls of roughly 108g each. Shape each roll by focusing the pressure at the heel of your palm, shaping the dough in a circular motion. Once the dough is rounded and has a smooth elastic top, gently press the dough to form small discs.
Place each shaped dough disc into a well sprayed baking casserole dish. Cover with plastic wrap and proof the dough discs once more for 30 min or until they have doubled in size.
Preheat an oven to 375°F.
Dust the top of the rolls generously with AP flour prior to baking. No need to egg wash as these are intended to stay light in color.
Bake for 20-25 minutes or until the internal temperature reaches 195°F. Allow to cool slightly before serving. Serve warm with plenty of Irish butter, or use for sandwiches such as fried bacon & egg or ham and cheese for an authentic Irish treat!
