Irish boxties are a delicious potato pancake that can be served either sweet or savory! This recipe is made with our organic Standard AP flour and is the perfect breakfast plate addition or as a tasty snack!

Boxty (Irish Potato Pancakes)
Yield: 1 dozen 6-inch boxties
Ingredients:
150g mashed potatoes (pre-cooked)
150g finely grated raw potatoes (peeled)
585g full fat buttermilk
5g baking powder
5g fine sea salt
Method:
Finely grate the peeled raw potatoes. Using a thin kitchen towel or cheese cloth, squeeze any excess liquid from the peeled potatoes into a medium bowl and set aside. Allow the liquid and starch from the potatoes to settle at the bottom of the bowl for about 10-min. Pour off the liquid and keep the starch at the bottom of the bowl. Place in the same bowl the peeled potatoes, mashed potatoes, flour, baking powder, and fine sea salt. Mix to combine. Pour the buttermilk into the mixture and fold the batter until it all comes together. Allow the batter to rest for at least 1hr before cooking. This can also be made the night before and kept in the fridge overnight. If so, pull the batter out from the fridge and allow to sit on the counter for 30min until cooking.
Heat a griddle pan to high heat. Spray with pan spray or use any kind of fat you prefer. Pour a ¼ cup of the batter onto the hot griddle pan and spread the batter out a little until it is about 6 inches in diameter. Cook for 2-3min on each side or until each side is a deep dark golden brown similar to a pancake or hash brown. Serve hot with your choice of savory or sweet toppings such as herb butter, cheese, eggs, jam, syrup, etc.! Great for breakfast or also as an authentic Irish snack with your favorite brew!
