A favorite of West Coast artisan sourdough bakers, like Tartine, Yecora Rojo was developed by the International Maize & Wheat Improvement Center in Cooperation with the Mexican ministry of Agriculture in Mexico. It was first received in California in 1970.

    Great flour

    A friend recommended this brand and this flour for bread making. I was doubtful that there would be a difference in taste but I was wrong! It tasted more like bread? If that makes sense. It made bread taste breadier.

    Great Flour!

    Just made a 35% whole wheat sourdough with Yecora Rojo as the whole wheat flour. I think it was some of the best bread I have ever made. Great rise, crust and crumb. It was very light and moist. Very flavorful, almost a subtle sweet flavor. I thought much better than with a regular whole wheat flour. Will make again and again.

    Great flours

    Almost a month ago I purchase three different flours to try - TAM 105, Yecora Rojo and Butler's Gold (all 00). So far, I've tried TAM 105 and Yecora Rojo, both in a batch of sourdough bagels. I loved both of them and look forward to trying Butler's Gold next. I also look forward to trying blends of these three until I run low then I'll be placing another order for more. I'll probably get more of the same and maybe try another. Regardless, when I'm running low I'll be back to purchase more of these great flours. Mostly what I bake are bagels, baguettes and English muffins - all sourdough. If I lived closer I'd definitely go to the store.

    This is the bread flour of my dreams

    So incredibly pleased with this flour! I quickly used up the whole bag and need to order more. I got the 00. Amazing hydration and gluten development properties -- bread dough becomes supple and elastic almost immediately upon mixing. Flavor and aroma are sweet and malty, making my breads extremely comforting and satisfying even without any other flour or adjunct additions. Can't recommend this flour enough!
