    Join us at Barton Springs Mill for a hands-on exploration of Georgian cuisine as we craft Khinkali—traditional, juicy dumplings bursting with savory Angus ground beef and authentic Georgian spices. Under the expert guidance of culinary instructor Katya Lyukum, you'll discover the remarkable qualities of Butler’s Gold Heirloom Flour, learning firsthand why heirloom grains produce superior flavor and texture.

    Khinkali are a staple of Georgian feasts, celebrated for their juicy meat filling and iconic pleated tops. Legend has it they originated in the mountainous regions of Georgia, where hearty fare was essential for traversing rugged terrain. Traditional Khinkali are grabbed by the top (aka kudi or “hat”), turned upside down, and eaten with your hands—sip the hot, flavorful broth inside before devouring the rest. Then, you can eat the rest of the dumpling, except for the part you’ve been using as a holder, the “hat.” Since khinkali is a communal dish, watch how many “hats” you collect on your plate to ensure nobody’s left behind.

    Class Policies:

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions. 

    In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

    Wonderful Class!

    We thoroughly enjoyed learning about the art of soba and soba traditions along with this hands-on class in making our own soba noodles. Our instructor, Katya Lyukum, taught us how to make her noddle dough recipe and expertly guided us through all the steps—easy for beginners! We enjoyed learning about the tips and tricks of making the noodles and how to serve them. The soba noodle meal with dashi broth, unagi, onsen tamago, nori, and watermelon radish was absolutely delicious. Thank you, Katya, for your informative class!
