    Join us at Barton Springs Mill for a hands-on class in making Adjaruli Khachapuri, Georgia’s iconic boat-shaped bread filled with melty cheese, butter, and topped with a silky, runny egg yolk.

    In this class, you’ll learn how to craft this show-stopping dish from scratch using a high-hydration dough made with Butler’s Gold heirloom flour. This lightly enriched dough creates a soft, creamy crumb with a crisp crust, forming the perfect base for the rich, cheesy filling.

    To ensure an authentic experience, we’ll use cheese crafted by ZakFarm USA, a passionate Ossetian family who brought their rich culinary traditions to the U.S. They hand-make their dairy products with care and dedication. Their cheese is the most authentic you can find in the U.S., bringing the flavors of the region straight to your plate. Each participant will enjoy a tasting set of 4-5 types of cheese, showcasing the variety and quality of their craft. At the end of the class, you’ll have the opportunity to purchase the cheese that wins over your taste buds. Don’t miss this delicious journey into culinary heritage!

    ZakFarm is a family business. When this Ossetian family arrived in the U.S. in 2023, they faced an unexpected challenge: finding high-quality dairy products to match the traditions of their cuisine. Determined to preserve their culinary heritage, they began making their own cheese, sour cream, and cottage cheese from raw milk. What started as a personal project quickly grew into a successful family business. Today, they produce and deliver fresh, handmade dairy products—like cheese, sour cream, and butter—across the East Coast, Atlanta, and Texas.     Class Policies:

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    By purchasing tickets to attend one of our classes, you acknowledge that you have read and agreed to our Participant Class Policies and Media Release. Close-toed shoes and a head covering (such as a baseball cap) required for all classes.

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes are required for entering any part of our facility. No exceptions. 

    In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

    Khachapuri class was fun (and tasty!) and the mill tour was fascinating. Our instructor Katya Lyukum did a great job of teaching a crowd with varied experience and skill, she paced the class well, and made even complex topics clear and accessible. When the Barton Springs Mill founder was getting started he looked at the grain varieties that were prevalent 100 years prior but had fallen out of favor, and he worked with the seed bank and local farmers to get some of them going again, in a sustainable way. BSM also offers some ancient and modern grains. I will explore their flour offerings in the future, but need to work down my stockpiles first. In the meantime, we came home with some interesting cornmeal, including “bloody butcher” red.

    The Khachapuri class normally uses cheese substitutes that are available locally, but our class had a serendipitous visit from a family who settled in North Carolina a couple of years ago and is now producing Ossetian cheese, so we got to make something more like the real deal (and we bought some extra cheese to play with at home).

    I will apply two lessons to future BSM classes. First, it's worth getting there early enough to get a seat toward the front of the room. Second, several veterans of prior classes who attended this brought their own wine bottles (or bought wine from the adjacent Abby Jane bake shop) to have with the final bake, which seemed like fun (but Abby Jane had sold out by the time I caught on).

    I am a hobby baker and wanted to take a class that would teach me something I didn’t know. Mission accomplished!! I learned about bread milling, types of cheeses to cook with, flour uses.
    The best part was eating what I created. Excellent. If you are interested in learning more, sign up for a class. Worth it!

    I don’t bake regularly but came with my baker husband and had a great experience. Katya is a wonder instructor, going at the right speed and adept at keeping everyone’s attention. We definitely will return for another class.

    This class was amazing! Highly recommend for beginners (me) and those who are more familiar with dough (my partner). Katya is a skilled, caring instructor who brings a passion for kachapuri! Bonus was getting to try Georgian cheese from a family farm. We also loved the informative flour tour.
