Momma's Classic Chocolate Cake
Sonora is one of the oldest surviving wheat varieties anywhere in North America. Predating Red Fife and Turkey Red wheat, it is a soft white, round winter wheat with pale red grains.
While earliest records document its existence in the mountain plains of Sonora, Mexico in the early 1700s, the wheat surely predates that era by generations. It was widely planted in California by the early 1800s.
Sonora flour is so good! There is lots of flavor, but it is mild and substitutes well as my all purpose flour. Of course, it is thirsty, and you know that you have eaten what you made. Yum!
I don’t consider myself to be a home baker. I usually use store-bought pie crust for my holiday baking. But I tried making my own pie crust with Sonora 00. My thanksgiving pies came out perfect, Light, flaky, golden and delicious. Thank you so much!

Several times now I have received a box containing bags of exploded flour. The outside of the box was pristine, so it was not the carrier's fault. The first time it happened, Barton Springs explained that they were in the process of upgrading their packaging. The second time it happened, years later, a representative named Kelly asked me to provide photographic evidence of the damage. I had not document the process of cleaning up the atrocious mess, especially since I knew Barton Springs was already aware of the issue. After scolding me, Kelly suggested I shop elsewhere in the future. I will be heading her advice.
I use this almost exclusively for homemade pasta. It is easy to work with and has wonderful “tooth” when it cooks up.
