Sonora is one of the oldest surviving wheat varieties anywhere in North America. Predating Red Fife and Turkey Red wheat, it is a soft white, round winter wheat with pale red grains.

While earliest records document its existence in the mountain plains of Sonora, Mexico in the early 1700s, the wheat surely predates that era by generations. It was widely planted in California by the early 1800s.

Remember! You don't need a special recipe. You can use stone-milled flours in any recipe. If you find the outcome a bit dry, don't be afraid to increase the liquid in your recipe. Our flours are thirsty!

    Love this flour for pasta!

    I use this almost exclusively for homemade pasta. It is easy to work with and has wonderful “tooth” when it cooks up.

    Sonora flour has produced light, fluffy cakes and bread for me. I have had excellent results with it and I plan to keep this flour on hand for further baking.

    Momma's Classic Chocolate Cake

    Fantastic cake. I used both of the suggested flours in the recipe quantities. I couldn't find the SRSLY cocoa powder so I substituted Triple Cocoa from King Arthur. If you love big chocolate in a really moist cake with creamy icing, make this cake. We didn't have any homemade vanilla ice cream which would have been da bomb.

    Sonora Flour Order

    I love Barton Springs Mill flour and you have been and will continue to be my primary flour source. Unfortunately, my last order came infested with flour mites and I didn't catch it before it spread through my entire stash of baking supplies. I was low on a lot of things anyway, but I still had to throw a lot out. I've learned from my mistakes and will be inspecting and freezing future orders but this was very disappointing.
