We're bringing pasta back to the mill, and you won't want to miss this class with Amaris Diaz who cut her culinary teeth at some of Austin's finest Italian dining establishments (check out some of her pasta creations in the photo gallery!). 

For this pasta intensive, you will spend class learning two basic methods for pasta - flour + water (typical of Southern Italian regions, aided by the use of durum wheat), and flour + egg (more typical of Northern Italy). Amaris has curated recipes designed to work with Barton Springs Mill flour, which will allow you see and feel the difference in our array of wheat varietals, and how and why to apply them in different pasta formulas. You'll get hands-on experience working through the nuances of hard and soft wheat pasta doughs, allowing you to fully enjoy the wide variety of wheat flours we offer here at the mill.

After mixing your doughs to perfectly pliable hydration, Amaris will lead you through rolling and shaping techniques. You'll learn how to turn your sheeted pasta into succulent tagliatelle and toothsome orecchiette, using approachable tools and methods that you can easily apply in your home kitchen. We'll cook the pasta in class (and you'll learn to salt your water properly), and then enjoy your dishes with some of Amaris' homemade sauces. 

Whether you're new to making homemade pasta, or want to hone your craft with an industry pro, we'd love to see you in class. ALL levels are welcome, and we're so excited to see you!

Class Policies:

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. Should COVID levels rise in the weeks/days leading up to class, we reserve the right to change our masking policy and will reach out via email with any updated guidelines. Should masks become a requirement for class based on statewide or countywide recommendations, non-masked participants will not be able to participate in mask-required classes. Refunds or ticket transfers are available for those who do not wish to attend a mask-required class.

Tickets are non-refundable, but transferrable up to 5 days before the class date.

In the event of class cancellation, we will email you to notify you of a canceled class.
