    Good, old-fashioned yellow corn. This open-pollinated corn is a staple in any kitchen. Golden yellow and bursting with the flavor of sweet corn.

      Oaxacan Green

      Oaxacan Green corn is a centuries-old variety that is a favorite of the Zapotec peoples, utilized in their green tamales and tortillas. This dent variety exhibits complex nutty, earthy flavors and aromas, and is high in starch. It lends a subtle yellow-green hue when cooked or baked.

      Hopi Blue

      Precursors of this strain of flint corn have been raised continuously for 800 years on the mesas of northern Arizona. Hopi Blue Corn was used by the Hopis to make ceremonial Piki Bread. It lends a bright and bold blue-purple hue when cooked or baked.

        The polenta was flavorful but not absolutely fresh when I received it. Surely there's a way to pack it in other than its (uninsulated) paper bag to ensure maximum freshness while shipping, etc.

        nice that it's ancient grain

        I appreciate that it's an ancient grain. However, I cooked it for an hour and a half, and it was still kind of grainy in texture. Not what I expected from polenta. I would use it in other cornmeal recipes.

        Not as good as the last Polenta I purchased from Barton Springs Mill

        This polenta is not nearly as finely ground as the last time I purchased it. The Oaxacan Green Polenta is not green either, like the last purchase. The last bag had a beautiful green color to it and a very nice, fine grind. I wish I could attach a picture of the two side by side. Honestly, I wonder if they accidentally put the wrong thing in the bags marked 'Oaxacan Green Polenta'.
