Tyler Carpenter, our bread-lover friend from neighboring Abby Jane Bakeshop, is coming to the mill to teach you how to make classic, French country style baguettes! From his years of experience in acclaimed artisanal bakeries in Austin and beyond, as well as time traveling and eating in France, Tyler has a wealth of knowledge & creativity to share with you in this class all about the baguette.

For this class, Tyler will be sharing a dough recipe and method to produce two baguettes within four hours, so you can take your recipe home and use it to your heart's content for any dinner or cheese board that just wouldn't be complete without a crusty & airy baguette friend! In class, you will start from the bottom of a recipe, mixing a dough with a unique and flavorful blend of carefully selected BSM flours. Tyler will include what flour choices work best for a baguette, as well as creative ways to incorporate specialty flours and whole wheats in your dough. He will walk you through the resting, rising, and shaping processes, as well as provide demos for more advanced applications of the baguette craft. This means that within class, you will master a basic, yet elevated baguette recipe & method, and leave with some techniques and ideas to inspire your baking at home. This class is suitable for beginner to intermediate, and even advanced home bakers. All levels are welcome and can gain something from this class!

During class, we will provide some elegant snacking opportunities (carnivore & vegetarian-friendly options available 😉). Think: butter & cheese options galore from local & specialty purveyors!

Class Policies:

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. Should COVID levels rise in the weeks/days leading up to class, we reserve the right to change our masking policy and will reach out via email with any updated guidelines. Should masks become a requirement for class based on statewide or countywide recommendations, non-masked participants will not be able to participate in mask-required classes. Refunds or ticket transfers are available for those who do not wish to attend a mask-required class.

Tickets are non-refundable, but transferrable up to 5 days before the class date.

In the event of class cancellation, we will email you to notify you of a canceled class.

Class was SO much fun

My husband and I had a great time in the Vietnamese Crepes class. The instructor was clear, the mill tour was wonderful, and we now feel we can make these marvelous crepes at home

Baguette making class

Started with a blueberry scone and a ham and cheese croissant and iced tea from Abbie Jane then I was ready (front row ready) for class- the time flew by and I felt like a star student! Tyler and Kimberly were a great balance and the snacks were a great pick me up!

Fantastic experience!

This class was extremely interesting. I enjoyed learning about the different types and history of grains, and I learned new techniques for making baguettes that I just couldn’t get from watching videos online. The property itself is gorgeous, and the bakery smelled amazing. Do yourself a favor and buy something from the bakery before the class - by the time it’s over it’ll be all gone. Thanks so much for offering these classes!

Fun, delicious, and nutritious!

Due to my insulin resistance, I am not supposed to eat modern shelf stable flours.

And man - I sure do miss bread.

I took this class to see the mill and learn more about the flour.

Loved the class, my husband even seemed to have fun too.

Best news - I ate some bread for dinner last night while wearing my continuous glucose monitor! This bread when paired with fat and protein was still a glucose stable meal for me!!!!!

I can eat this bread!!!!!
