Join us at the mill as Katya teaches us how to make the ULTIMATE English-inspired brunch. Take a trip to London via the BSM Education Center, and learn to make savory English Muffins (to be served with goat cheese + chive spread, and tequila-cured salmon) and delightful Chamomile Scones (to be served with clotted cream and jam). 

This course is a great way to experience how stone-ground flour can elevate "quick breads" like scones and English Muffins from their already-beloved status to next-level flavor centerpieces. During class, you will spend time learning how to choose the right flours for these delicacies, expertly mix these doughs from scratch using high-quality ingredients, discover key indicators to look for in your dough in order to achieve the right texture for English Muffins and Chamomile Scones respectively, and cook these items perfectly to achieve ultimate satisfaction. While your scones bake in the oven, you'll work in teams of 4 to griddle your English Muffins, ready to be served with herbed goat cheese mousse and one of Katya's favorite Mexico-City inspired dishes - tequila-cured salmon. Now a dish at Austin's beloved Fonda San Miguel (and published in their cookbook), this tequila-cured salmon was served to FSM founder Miguel Ravago in the Mexico City home of Guadalupe Rivera Marin (daughter of Diego Rivera), and is a great dish to have in your back pocket to elevate any meal. 

Expect to learn about basic bread techniques, including dough mixing, bulk fermentation, shaping, and cooking griddled breads, as well as some basic pastry technique with your scones, including butter-crumbing techniques for soft scone texture, chilling doughs and baking at appropriate temperatures, and much more! As always, Katya is an absolute wealth of knowledge when it comes to refining kitchen techniques and building an elegant finished dish - we always learn so much from her!

By purchasing these class tickets, you acknowledge and agree to our Participant Class Policies and Media Release FormClose-toed shoes and a head covering (such as a baseball cap) required for all classes.

TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERRABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
