This workshop with Ashley Whitmore is designed to teach you creative and delicious ways to incorporate unique stone-milled grains into one of the most delicious cookies - shortbread! Shortbread is the perfect template for learning about pastry science, crumb structure, and how to highlight the flavors of single-varietal flours and botanical add-ins.

While shortbread may seem simple, there's actually quite a bit of chemistry and math that goes into achieving the right balance of structure and the classic melt-in-your-mouth texture of this buttery cookie. Ashley will teach you how to master her classic shortbread recipe, sharing all of the science behind fat ratios, protein percentages, and grain protein factors along the way. Additionally, you will learn how to adapt a standardized shortbread formula for unique add-ins like ancient grains, rye, whole-grain wheats, and flavor-boosting botanicals. Look forward to tailoring your shortbread recipe to taste by selecting your own flour additions or other add-ins, and topping with finishing elements like demerara sugar or glazes. You'll leave class with freshly baked shortbread and some dough to take home and bake off fresh at your leisure.

We hope you come to this shortbread workshop to learn more about making exceptional pastry with stone-ground flours.

      Things to look forward to:

      • Have an opportunity to work with our own fresh grains and flours, grown organically and stone-milled onsite!
