Type

Bannetons are used to provide structure for shaped loaves of bread during proofing; also referred to as brotform or proofing baskets. They are normally used for doughs that are too soft or wet to maintain their shape while rising.

I am pleased that Barton Springs Mill still supplies this traditional regional rice. Once a common staple, this rice is hard to find in specialty restaurants let alone grocery stores.
