SEPTEMBER 9, 2023: Stuffed Flatbreads & C.L. Butaud Wine Tasting

We're thrilled to bring back the culinary + wine tasting duo with this collab between some of our favorite people - global cuisine expert Katya Lyukum and the Texas winemakers at C.L. Butaud.  During this class, you can expect a laid-back educational experience featuring some of the best food and drink around. 

For the culinary portion, Katya will teach you and your partner to make one of our favorite stuffed flatbreads - the Ossetian Pie. These tender, stuffed flatbreads are perfect as filling appetizers for a crowd, or as the centerpiece for a family-style meal. These pies are also perfect for any pizza enthusiast ready to expand their flatbread repertoire, and dive into the world of stuffed dough. Classic Ossetian pies combine feta-like cheeses and seasonal greens and vegetables to create a well-rounded mouthful. Hot out of the oven and brushed with melted butter, these are sure to please even the choosiest palate! In this class, Katya will walk you through the dough-making, shaping, stuffing, and baking processes from start to finish, and you will be able to sample a course of three pies. The dough recipe you will learn is true to Ossetian recipes, and yields a soft, creamy crumb - perfectly complimented by Katya's curated menu of three traditional, and delicious fillings:

  • Sakharadjin (beet tops + cheese)
  • Kabuskajin (cabbage + cheese), and
  • Fytchin — a holiday beef pie 

In addition to your dough adventures, we are excited to share the spotlight with local wine producer C.L. Butaud. With their elegant flavor combinations, Ossetian pies are the perfect pairing for Napa-educated and Texas-centric winemaker Randy Hester, who uses "a minimalist and sometimes experimental approach...paying respect to centuries of evolution in winemaking, while backing up his artistic instinct with the empirical data of fermentation science."  You'll spend a chunk of class moving through a curated wine tasting with one of C.L. Butaud's expert pourers, sipping through several varietals and learning just how exceptional Texas viticulture can be. Expect both clean and full-bodied wines, meant to delight the palate and remain true to the varietal.

Beginners are welcome, and encouraged to attend, though this class does include some intermediate level technique 😉.

Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required to remove most jewelry and piercings, and wear a beard net (if applicable) and/or hair net. Close-toed shoes are required for entering any part of our facility. 

In keeping with low COVID risk level in Travis County, masks are optional and up to personal discretion for this class. Should COVID levels rise in the weeks/days leading up to class, we reserve the right to change our masking policy and will reach out via email with any updated guidelines. Should masks become a requirement for class based on statewide or countywide recommendations, non-masked participants will not be able to participate in mask-required classes. Refunds or ticket transfers are available for those who do not wish to attend a mask-required class.

Tickets are non-refundable, but transferrable up to 5 days before the class date.

Awesome Class and Teacher

This class was awesome. Katya was an amazing hands on teacher. She gave us great information on all the ingredients being used as well as background on the pies we were making. Katya also gave us helpful hints while we were making the pies and helped us out if we had any problems. The wine pairings were also great (loved the Rose that was served while we were making the pies before the actual tasting). Loved this class and looking forward to attending more.
