Come learn how to make one of everybody's favorite Italian pastas - ravioli! Your instructor Martina was born and raised in Italy, where she learned and experimented with the recipes and ingredients of her home country. Martina will share all her secrets for making fresh, succulent, egg-enriched pasta and how to balance flavors in traditional Italian ravioli filling.

During class, you will master Martina's recipe and method for ravioli using our stone-ground Stardust '00' flour.  Starting from the dough, you will learn the benefits and virtues of egg pasta in a ravioli application, and learn how to mix all ingredients to achieve a smooth and flavorful pasta dough. Using a standard pasta roller, you will be able to achieve elastic and paper-thin pasta sheets. Next step: the filling! Fresh spinach and ricotta cheese, enhanced with a few flavorful spices, perfectly compliment the delicate pasta sheets you will carefully shape. Last, Martina will explain and demonstrate how to create different ravioli shapes. Once finished shaping our ravioli, we will sauté them with brown butter and fresh sage.

We hope you visit us to master the fundamentals of classic Italian ravioli!
