Used this in crescent dough and didn’t adjust so he was a heavier/tough dough.

Ancient Grain Belgian Waffles
Yield: 12 Waffles

Tools: mixing bowl, electric whisk/Kitchenaid, Belgian waffle maker
240g BSM Ancient Grain Blend
16g Baking powder
3g Salt
3g cinnamon (optional)
2g ginger (optional)
Pinch cardamom (optional)
50g Sugar
2 Large Eggs
108 Grape seed or Canola Oil
490g Whole milk
12g vanilla extract
Zest of one lemon (optional)
Baking instructions:
Separate egg yolks from whites. Whip whites until stiff peaks form. Set aside.
Whisk together the flour, baking powder, salt, sugar and spices. Set aside. Combine eggs, oil, milk and vanilla. Add wet ingredients to dry ingredients and whisk until no lumps. Fold in egg whites into two increments. Be sure to fold until no egg white lumps appear. Fold in the lemon zest.
Heat a Belgian waffle maker to the appropriate setting then lightly spray each side. Pour about ½ cup of batter into each waffle square and cook for 5-8 min or until the waffle maker states ready!
