    Looking to make fluffier, taller, more bewitching biscuits? Whether for the holidays, brunch, or just  a Sunday at home, biscuits are a hit at any table. These impossibly soft and also somehow crunchy little breads are excellent in their most straightforward presentation, and also perfect vehicles for almost any flavor combination you can imagine. This class will walk you through every technique necessary to produce this elusive result and demystify the delicate wet and dry incorporation, kneading, handling, and shaping to give you the results you are looking for.

    Lynn Metcalf, co-owner, head chef, and lead baker at Lynny’s has been perfecting her biscuit recipe for decades and believes that a truly delicious biscuit should be like a cloud on a plate. Known for her impossible to put down biscuits, and her unique flavor combos (Oreo biscuit, anyone?!?), Lynn is a creative force in the baking world, offering traditional recipes with fun twists. 

    In this 3 1/2 hour class, you will get your hands doughy and learn to trust yourself more. We will make 2 different types of biscuits, a classic milk biscuit with a mix of hard and soft white wheat flours, and a beer and cheese biscuit with a hearty red wheat blend to see firsthand the impact every choice makes on your finished product. We will be tapping into the true scientific nature of baking; experimentation as an art form!

      BYOB is fine by us for participants 21+ 🥂

      • Craft from scratch two different biscuits using two different blends of our stone-ground fresh flours
      • Have an opportunity to work with our own fresh grains and flours, grown organically and stone-milled onsite

      Class Policies:

      TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

      Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions. 

      In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
