    BAGUETTE CLASS WAITLIST GUIDELINES:

    Hello baguette enthusiast! You have reached our baguette waitlist system. To be notified as soon as we add another date for our baguette class, please click the "NOTIFY ME WHEN AVAILABLE" button above to receive an email or text message when we restock tickets for a new date. Please note that this only guarantees that you receive a message as soon as we add a new class date, and does not guarantee that you will get a seat. You are not guaranteed admission until your purchase is confirmed.

    This function will only notify you of tickets for a new date - you will not receive any notifications for new tickets added to an existing baguette date. To receive notifications for a currently sold-out class, please go to that class page and use the "NOTIFY ME WHEN AVAILABLE" function from that page.

    Ticket purchases are first-come, first-serve. As always, ticket purchases are final sale, non-refundable, and non-transferable to other class dates.

    Cost: $150 per single-entry HANDS-ON ticket, $50 for AUDITOR* ticket (in-person, does NOT include hands-on participation, but includes all other class perks!)

    *The "Auditor" ticket includes the class recipe and handout; opportunity to ask questions; take home a portion of the in-class starter; 15% off in-class purchases; tour of the facility; and enjoy the in-class snacks. The "Hands On" ticket includes everything included for auditors, with the addition of baking your own loaf and making your own dough that you will get to take home.

    Tyler Carpenter, our bread-lover friend, is coming to the mill to teach you how to make classic, French country style baguettes! From his years of experience in acclaimed artisanal bakeries in Austin and beyond, as well as time traveling and eating in France, Tyler has a wealth of knowledge & creativity to share with you in this class all about the baguette.

    For this class, Tyler will be sharing a dough recipe and method to produce two baguettes within four hours, so you can take your recipe home and use it to your heart's content for any dinner or cheese board that just wouldn't be complete without a crusty & airy baguette friend! In class, you will start from the bottom of a recipe, mixing a dough with a unique and flavorful blend of carefully selected BSM flours. Tyler will include what flour choices work best for a baguette, as well as creative ways to incorporate specialty flours and whole wheats in your dough. He will walk you through the resting, rising, and shaping processes, as well as provide demos for more advanced applications of the baguette craft. This means that within class, you will master a basic, yet elevated baguette recipe & method, and leave with some techniques and ideas to inspire your baking at home. This class is suitable for beginner to intermediate, and even advanced home bakers. All levels are welcome and can gain something from this class!

    During class, we will provide some elegant snacking opportunities (carnivore & vegetarian-friendly options available 😉). Think: butter & cheese options galore from local & specialty purveyors!

    Class Policies:

    TICKETS ARE FINAL SALE, NON-REFUNDABLE, and NON-TRANSFERABLE TO OTHER CLASSES. You may transfer tickets to another person to attend in your place - simply have them check in under the original name used to purchase the ticket(s).

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions. 

    In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

    Perfect day start to finish

    I enjoyed my entire day at BSM! Quiche and cream puff at Abby Jane’s shop… order online and skip the line out the door 😉 then class started at noon. Tyler was informative and witty, fun to watch him demonstrate the techniques. He made baguettes approachable.

    Mill tour was fabulous. It helps you understand the different wheats much better, and gave me some hope about countering some of the risks that commercialized wheat production create (biodiversity of the species, heirloom varieties for not only flavor, but protection against future pest or climate threats). Their process is second-to-none and great if you are looking to clean up your diet from pesticides, etc.

    Baking baguettes

    Great class, Tyler was our instructor, he was good with both oral and visual directions and tips while still keeping the activity light and fun.

    The factory tour was interesting. Our factory tour guide, Nadia and her passion for working here was evident and contagious.

    I highly recommend the class, you not only learned a good skill but you leave with warm bread as well.
