    Cost: $150 per single-entry ticket HANDS-ON ticket, $50 for AUDITOR* ticket (does not include hands-on participation)

    *The "Auditor" ticket includes the class recipe and handout; opportunity to ask questions; take home a portion of the in-class starter; 15% off in-class purchases; tour of the facility; and enjoy the in-class snacks. The "Hands On" ticket includes everything included for auditors, with the addition of baking your own loaf and making your own dough that you will get to take home.

    Tyler Carpenter, our bread-lover friend, is coming to the mill to teach you how to make country style baguettes! From his years of experience in acclaimed artisanal bakeries in Austin and beyond, as well as time traveling and eating in France, Tyler has a wealth of knowledge & creativity to share with you in this class all about the baguette.

    For this class, Tyler will be sharing a dough recipe and method to produce two baguettes within four hours, so you can take your recipe home and use it to your heart's content for any dinner or cheese board that just wouldn't be complete without a crusty & airy baguette friend! In class, you will start from the bottom of a recipe, mixing a dough with a unique and flavorful blend of carefully selected BSM flours. Tyler will include what flour choices work best for a baguette, as well as creative ways to incorporate specialty flours and whole wheats in your dough. He will walk you through the resting, rising, and shaping processes, as well as provide demos for more advanced applications of the baguette craft. This means that within class, you will master a basic, yet elevated baguette recipe & method, and leave with some techniques and ideas to inspire your baking at home. This class is suitable for beginner to intermediate, and even advanced home bakers. All levels are welcome and can gain something from this class!

    During class, we will provide some elegant snacking opportunities (carnivore & vegetarian-friendly options available 😉). Think: butter & cheese options galore from local & specialty purveyors!

    Class Policies:

    Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions. 

    In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.

    Learn how to make a Baguette with Tyler

    So well organized! Everything we needed was provided & the baguettes magically turned out great. The timing was well thought out. If you’ve seen the mill before, bring a cookbook to browse while the dough is rising. Tyler answers every single question & Frida attends to every need. The snacks are delicious.

    A baguette course for all levels

    A crash course in baguettes, starting from scratch!

    Tyler was a great class facilitator who encouraged students to ask questions, get creative (pretzel-making add on!), and get as much baguette shaping practice as possible. His baking experience was really helpful in understanding the nuances of the bread-making process.

    I feel confident I could go home and pretty much replicate the steps Tyler taught us…onward to 100 baguettes (the tipping point, apparently)!

    I think this was a very comprehensive course suitable for just about anyone. Really great snacks along the way as well as a nice tour of the mill. Ready to continue my baguette journey!

    Fun class

    My daughter was in town visiting and we took the intro to baguettes class and loved it. We learned a lot and had fun making some delicious bread! This was my third class at Barton Springs mill and it won’t be my last!
