Chiffon is a delicate, light, and irresistibly delicious sponge cake that pairs very well with spring and summer’s bounty of fresh fruits! It is a staple sponge cake to have in one’s baking repertoire for all of life's occasions.
In this workshop, students will have the opportunity to learn the fundamentals and technique to make light and airy chiffon sponge using our stone milled flours. Professional Baker and Cake Artist Pamela Thibodeaux, also known respectively as Deaux Baker, will walk students through the process of techniques such as torting cake sponge, adequate filling ratios, and coating with buttercream. Known for her signature whimsical pipework, students will learn several buttercream piping techniques from Pamela as each student will assemble and decorate their own individual cakes. The class will also discover how to utilize and source local non-toxic flowers, and apply that to the structural styling of floral design on cakes.

Professional baker and Cake Artist Pamela Thibodeaux has been baking for over the last decade in various Texas bakeries, such as Sour Duck and Abby Jane Bakeshop. Pamela was also our resident Recipe Developer here at Barton Springs Mill for the last three years. After graduating with a Bachelor of Science in Hospitality Management and Culinary from the University of North Texas, Pamela’s journey led her to pursuing artisan baking, in which she has been using our stone milled flours since the very early milling days. Pamela established her cottage cake studio known as Deaux Baker in 2022 here in Central Texas. Here she creates whimsical and sculptural cakes sourcing our stone milled flours, seasonal ingredients, and local non-toxic florals from various farms. Her work has been featured in national wedding publications such as The Knot and The Wed, as well as Austin’s local cultural publication Tribeza Magazine. Touring our facility requires that all participants adhere to health guidelines - all touring participants (included in ticket) will be required wear a hair net that effectively restraints all hair, including mustaches, goatees, and any other facial hair. Close-toed shoes and shirts that cover the underarms and shoulders are required for entering any part of our facility, per health code. No exceptions.
In keeping with the low COVID risk level in Travis County, masks are optional and up to personal discretion for this class.
