    Einkorn Berry & Overnight oats
    Yield: 5 cups

Download a printable version of the recipe here.

    Ingredients:
    1 cup BSM Einkorn berries
    4 cups boiling water
    (soak overnight)
1 cup of steel cut or rolled oats
1 cup plain yogurt (whole Greek yogurt used here)
1 cup milk (whole milk or oat/almond)
    2 T honey
    1⁄4 tsp salt
    1⁄2 tsp cinnamon (optional)
    Pinch of cardamom (optional)

    Garnish:
    Preferred fruits, nuts etc.
If you do not eat oats try using chia seeds instead!

In a medium bowl, combine Einkorn berries and boiling water. Allow to sit overnight at room temperature (8-12 hrs).
Strain the berries and rinse to ensure no other seeds are present. This is the nature of organic farming!
Combine berries, oats, and the remaining ingredients in a small casserole dish or place all ingredients in a mixing bowl to divide into individual jars. Allow the mixture to sit for 4 hrs in the fridge or overnight.
Will keep for 3-4 days at best in the fridge. Get creative by adding your own toppings and spice blends!
Did you know Einkorn has a higher percentage of protein than modern red wheats and is considered more nutritious because it also has higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene? By adding to your standard overnight oats, you are increasing your intake of protein and essential vitamins. Cheers to good health!
