    A unique spin on a Tex-Mex recipe queso "cheese" dip using our organic stone milled corn grits for added flavor and texture. This recipe creates a large batch for all of your upcoming summer cookouts and gatherings. Every Texan knows you can never have too much queso dip at the party!

    Texas Grits Queso Dip

    Yield: 15-20 servings (2 quarts)

     

    Ingredients:

     Grits:

    ½ cup BSM grits (any variety)

    2 cups broth (beef, chicken or vegetable)

    (yields about 2 cups cooked)

     

    Queso:

    1 ½ cups cooked BSM grits                                    

    1 T BSM All Purpose flour

    1 T unsalted butter

    1 4oz (113g) can diced green chilies

    3 cups whole milk

    4 cups Jalapeno Monterey Jack cheese (shredded)

    4 T chili lime hot sauce or traditional (Cholula used here)

    3 T fresh lime juice

    1 ½ tsp fine sea salt

    1 tsp onion powder

    1 tsp garlic powder

    1 tsp paprika

     

    Garnish ideas: (optional)

    cooked chorizo, barbacoa, el pastor

    fresh cilantro

    sliced avocado

    tortilla chips (naturally!)

     

    Pre-cook ½ cup of grits in 2 cups of broth on medium heat until the grits are tender. Stir often to prevent from sticking. Set aside.

     

    In a medium stock pot or sauce pan, heat over medium heat the butter and flour to create a quick roux. Cook for 3 min and whisk constantly to prevent the flour from burning. Add the diced green chilies (do not strain the juices) into the roux and stir. Add the onion powder, garlic powder, paprika, and salt to the roux mixture. Whisk in the 3 cups of milk and continue to whisk the mixture consistently until the milk begins to steam about 4 min. Add the cooked grits and shredded cheese. Whisk constantly to allow the cheese to melt and fully incorporate. Whisk in the lime juice and hot sauce. Lower the temperature to low-medium and whisk very often until the mixture is fully incorporated and the flavors bloom, about 10-15 min.

     

    Garnish with the suggested toppings or whatever toppings you prefer. Serve immediately with your favorite tortilla chips for an instant crowd pleaser, because queso dip is life here in Texas!
