Ingredients:

450 grams Barton Springs Mill Marquis '00'

25 grams sugar

8 grams salt

1 packet active dry yeast OR 5g instant yeast

120 grams whole milk

140 grams water

40 grams orange juice

56 grams melted butter

Directions:

In a large bowl, combine all of the dry ingredients and stir. In a microwaveable bowl, melt butter and combine with all wet ingredients. Warm the wet ingredients in the microwave to 85 degrees F.

Add wet ingredients to dry until the dough becomes a single mass. Transfer to a mixer with dough hook and knead on speed 2 (on your standard Kitchen Aid) for 11 minutes. The dough should become very smooth.

PROOF 1: Transfer the dough to a lightly greased bowl, or clear cylindrical container, and cover. Set in a warm place and allow rise until doubled in size, about 1 hour.

Transfer proofed dough to a lightly oiled surface. Shape the dough into a log about 7-8 inches long.

Preheat oven to 350°F.

PROOF 2: Place shaped dough in a lightly greased 8 1/2" x 4 1/2" loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 60 minutes, until it's domed about 1" above the edge of the pan.

Bake for 30 to 35 minutes, until light and golden brown and interior temperature is 190°F. Cool on a rack before slicing. Enjoy!

Excellent Einkorn Berries & Great Customer Service!

We live locally in Austin and wanted to pick up some Einkorn berries (we make sourdough Einkorn bread and love it) and customer service was quick to reply and get my order ready for pickup! Very friendly and helpful. Excellent wheat berries without hulls (we’ve had an issue buying from other companies where the hills were still intact on a lot of the berries. We love Barton Springs Mill!

Nice surprise

The Bloody Butcher corn meal I purchased arrived neatly packaged and ready to use. It mixed well with my corn bread recipe and it turned out smooth, rich texture and delicious. I'd definitely buy it again.

Love white wheat berries!

Loving the new Big Country white wheat berries from Barton Springs Mills! It has been 20+ yrs since I had access to and used white wheat for baking, I had forgotten the beauty of the flour. Thank you!

Beautiful Grain!!

Besides being beautiful, my sourdough starter couldn’t be happier. Have already made bread, and it is super complex and smells like toasty heaven. The best part is the heritage and organic stewardship, which we all need more of in our current mono-culture world. Thanks Barton Springs for all your hard work on this one!!
